- 285 grams water
- 70 grams active sourdough starter Make sure it is active
- 16 grams sugar
- 12 grams oil Experiment with different oils for flavor
- 500 grams bread flour All-purpose flour can work but texture may differ
- 13 grams salt
Method
Preparation
- In a large bowl, combine the water, starter, sugar, and oil.
- Add the flour and salt. Mix everything until no dry flour remains. If it gets tough to mix with a spoon, use your hands.
- Cover the bowl and let it rest for 15-30 minutes.
- Perform a round of stretch and folds to shape the dough into a tight ball.
- Cover again and let it rise at room temperature until it doubles in size.
- Grease an 8 by 4-inch loaf pan.
- Turn the dough out onto a lightly floured surface and shape it into a log.
- Place the log seam-side down in the prepared pan and cover with a towel.
- Let it rise until the dome of the dough is 1 inch above the rim of the pan.
Baking
- Preheat your oven to 375 degrees Fahrenheit.
- Bake for 45-50 minutes until the bread is brown and baked through.
- Cool in the pan for 10 minutes, then invert to release and cool completely on a wire rack.

Notes
To keep your bread fresh, store it in a bread bag or wrap it in a kitchen towel. You can also store it in an airtight container at room temperature for up to 3 days and freeze slices for longer storage.
