Ingredients

Dough Ingredients

  • 285 grams water
  • 70 grams active sourdough starter Make sure it is active
  • 16 grams sugar
  • 12 grams oil Experiment with different oils for flavor
  • 500 grams bread flour All-purpose flour can work but texture may differ
  • 13 grams salt

Method

Preparation

  • In a large bowl, combine the water, starter, sugar, and oil.
  • Add the flour and salt. Mix everything until no dry flour remains. If it gets tough to mix with a spoon, use your hands.
  • Cover the bowl and let it rest for 15-30 minutes.
  • Perform a round of stretch and folds to shape the dough into a tight ball.
  • Cover again and let it rise at room temperature until it doubles in size.
  • Grease an 8 by 4-inch loaf pan.
  • Turn the dough out onto a lightly floured surface and shape it into a log.
  • Place the log seam-side down in the prepared pan and cover with a towel.
  • Let it rise until the dome of the dough is 1 inch above the rim of the pan.

Baking

  • Preheat your oven to 375 degrees Fahrenheit.
  • Bake for 45-50 minutes until the bread is brown and baked through.
  • Cool in the pan for 10 minutes, then invert to release and cool completely on a wire rack.

Notes
