Ingredients

For the pork chops

  • 4 pork chops Bone-in or boneless
  • 1 cup all-purpose flour For coating
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon black pepper Adjust to taste
  • 1 teaspoon paprika For flavor
  • 2 large eggs For the egg wash
  • 1 cup milk For the egg wash
  • Vegetable oil for frying As needed

For the gravy

  • 2 tablespoons butter For cooking the gravy
  • 2 tablespoons all-purpose flour For thickening
  • 2 cups milk For the gravy
  • Salt and pepper to taste For seasoning

Method

Preparation

  • In a shallow dish, mix together flour, salt, pepper, and paprika.
  • In another bowl, whisk together eggs and milk.
  • Dip each pork chop first in the egg mixture and then in the flour mixture, coating both sides well.

Cooking

  • Heat vegetable oil in a skillet over medium-high heat.
  • Once hot, add pork chops and fry until cooked through and golden brown, about 5-7 minutes on each side.
  • Remove from the skillet and place on a paper towel to drain.

Making the Gravy

  • Melt butter in the same skillet, then sprinkle in flour and cook for 1 minute.
  • Gradually whisk in milk until smooth, cooking until thickened.
  • Season with salt and pepper.

Serving

  • Serve pork chops with gravy poured over the top.

Notes

Make sure the oil is hot enough before adding the pork chops to get that crispy crust. Don’t overcrowd the skillet; fry in batches if needed for even cooking. Adjust the amount of salt and pepper in the gravy to your taste preference. If you like a spicier gravy, add a pinch of cayenne pepper!
