  • 4 large potatoes Peeled and chopped
  • 3 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1/4 cup pickle relish
  • 1 teaspoon mustard
  • to taste Salt
  • to taste pepper
  • Paprika for garnish (optional)

Method

Preparation

  • Peel and chop the potatoes into bite-sized pieces.
  • Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  • In a large bowl, combine the cooled potatoes, chopped hard-boiled eggs, mayonnaise, pickle relish, mustard, salt, and pepper.
  • Mix well until all ingredients are combined.
  • Transfer to a serving dish and sprinkle with paprika if desired.
  • Chill in the refrigerator for at least 30 minutes before serving.
