- 4 large potatoes Peeled and chopped
- 3 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 1/4 cup pickle relish
- 1 teaspoon mustard
- to taste Salt
- to taste pepper
- Paprika for garnish (optional)
Method
Preparation
- Peel and chop the potatoes into bite-sized pieces.
- Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine the cooled potatoes, chopped hard-boiled eggs, mayonnaise, pickle relish, mustard, salt, and pepper.
- Mix well until all ingredients are combined.
- Transfer to a serving dish and sprinkle with paprika if desired.
- Chill in the refrigerator for at least 30 minutes before serving.

Notes
