  • 1 avocado, diced Add just before serving to prevent browning.
  • 1 each lime, juiced Lime adds significant flavor.
  • 1 teaspoon cumin

Method

Preparation

  • In a large mixing bowl, combine the cottage cheese, corn, black beans, and diced red bell pepper.
  • Squeeze the lime juice over the mixture and add cumin, salt, and pepper.
  • Gently fold everything together until well combined.
  • Just before serving, add the diced avocado and mix carefully.
  • Garnish with fresh cilantro.
