Method
Preparation
- In a large mixing bowl, combine the cottage cheese, corn, black beans, and diced red bell pepper.
- Squeeze the lime juice over the mixture and add cumin, salt, and pepper.
- Gently fold everything together until well combined.
- Just before serving, add the diced avocado and mix carefully.
- Garnish with fresh cilantro.
