Ingredients

For the roasted sweet potatoes

  • 2 large sweet potatoes, diced into 1/2-inch cubes Helps achieve even roasting.
  • 1 spray avocado oil spray Preferably Chosen Foods for high smoke point.
  • 3/4 tsp salt
  • 3/4 tsp paprika
  • 3/4 tsp garlic powder
  • 1/4 tsp black pepper

For the beef mixture

  • 1 lb ground beef (80/20 ratio) Provides the best flavor.
  • 1 tsp salt
  • 1.5 tsp paprika
  • 1.5 tsp chili powder
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1/4 cup fresh cilantro, chopped

For assembly

  • 1 large avocado, sliced into 1/4-inch thick wedges
  • 16 oz cottage cheese Use Good Culture for thickest texture.
  • to taste crushed red pepper For added kick.
  • to taste hot honey Adds a spicy-sweet contrast.
  • 1 tbsp fresh lime juice

Method

Preparation of Sweet Potatoes

  • Dice the sweet potatoes into uniform 1/2-inch cubes.
  • Spread them in an air fryer basket and spray well with avocado oil.
  • Mix the salt, paprika, and garlic powder in a small bowl. Toss the sweet potatoes in this seasoning until well coated.
  • Air fry at 400°F for about 18 minutes, shaking the basket halfway to ensure even cooking.

Cooking the Beef

  • Heat a large skillet over medium-high heat and add the ground beef, breaking it into small pieces.
  • Brown the beef for 5-7 minutes until fully cooked. Let it sit for a minute to develop flavor.
  • Drain excess fat if needed and add salt, paprika, chili powder, garlic powder, and onion powder to the beef. Mix well and cook for an additional 30 seconds until fragrant.

Assembling the Bowls

  • Divide the cottage cheese into serving bowls as the cool base.
  • Layer the roasted sweet potatoes and seasoned beef on top.
  • Add fresh avocado slices and drizzle hot honey over the beef.
  • Sprinkle with crushed red pepper and finish with lime juice.
