  • 8 oz rotini pasta any pasta shape can be used
  • 1 small onion, diced adds sweetness and flavor
  • 2 cloves garlic, minced for aromatic flavor
  • 2 cups beef broth can be low-sodium if desired
  • 3/4 cup heavy cream for a rich and creamy sauce
  • 1 1/2 cups shredded cheddar cheese can substitute with mozzarella or pepper jack
  • 1/2 tsp paprika adds color and mild flavor
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper adjust to taste
  • 1 tbsp chopped parsley optional, for garnish

Method

Cooking the Beef

  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes, stirring occasionally. Drain any excess fat.
  • Add the diced onion and cook for 3-4 minutes until soft and translucent. Then, add the minced garlic and stir for 30 seconds to 1 minute until fragrant.

Simmering

  • Sprinkle in the paprika, salt, and black pepper, stirring well to coat the beef and vegetables evenly.
  • Pour in the beef broth and bring to a gentle simmer. Once simmering, add the rotini pasta, cover the skillet, and let it simmer on medium-low heat for 10-12 minutes, stirring occasionally.

Finishing Touches

  • Once the pasta is tender, pour in the heavy cream and add the shredded cheddar cheese. Stir until the cheese melts and the sauce becomes creamy.
  • Taste the pasta and adjust the seasoning if necessary. Serve hot and enjoy!
