- 3 cups strawberries (frozen (thawed), or fresh) Fresh strawberries are preferred when in season.
- 3 Tbsp honey Adjust based on your taste for sweetness.
- 2 Tbsp lemon juice Adds a hint of tang to the roll-ups.
Method
Preparation
- Preheat your oven to 140 to 170 degrees F, or choose the lowest setting your oven allows. Line a sheet-pan with parchment paper and set it aside.
- In a food processor or blender, combine the strawberries, honey, and lemon juice, and blend until the mixture is smooth.
Baking
- Pour the fruit mixture onto the lined sheet-pan, spreading it out evenly to about ⅛ to ¼ inch thick.
- Place the sheet-pan in the oven and let it bake for 4 to 6 hours, checking until the middle is no longer tacky to the touch.
Finishing
- Once done, let it cool completely, then carefully remove it from the sheet-pan.
- Using clean scissors or a pizza cutter, trim the edges and cut the fruit leather into 1-inch wide strips.

Notes
Store your homemade fruit roll-ups in an airtight container at room temperature for up to a week. For longer storage, place them in the fridge for about two weeks. Stack with parchment paper in between to prevent sticking. Adjust honey based on preference and check moisture towards the end of baking to avoid over-drying.
