Ingredients

Mochi Mixture

  • 1 cup sweet rice flour (mochi flour) This gives the mochi its chewy texture.
  • 1/4 cup sugar Adjust according to your sweetness preference.
  • 3/4 cup water Add gradually to achieve the right consistency.

For Dusting and Filling

  • Cornstarch For dusting to prevent sticking.
  • Fresh strawberries (washed and hulled) Use ripe strawberries for best flavor.
  • Optional: Red bean paste or other fillings Try different fillings for variations.

Method

Preparation

  • In a microwave-safe bowl, mix the sweet rice flour and sugar. Gradually add water and stir until smooth.
  • Cover the bowl with plastic wrap and microwave for 1 minute.
  • After the first minute, stir the mixture, then microwave for another 1 minute.
  • Stir again and microwave for a final 30 seconds.
  • Allow the mochi to cool slightly, then dust your hands and a clean surface with cornstarch.
  • Knead the mochi dough until it is smooth and pliable.
  • Divide the dough into small portions and flatten each piece into a circle.

Assembly

  • Place a strawberry (and optional filling, if using) in the center of each dough circle.
  • Wrap the dough around it and pinch to seal.
  • Dust with cornstarch to prevent sticking.
