Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 cup coconut flour or oat flour
  • 1/4 tsp salt
  • 1 scoop vanilla protein powder

Wet Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 tsp almond or vanilla extract
  • 1 TBSP unsweetened vanilla almond milk
  • 1/4 cup coconut oil, melted

Strawberries

  • 3-5 fresh strawberries
  • 1 oz freeze-dried strawberries measures to a little more than a cup

Method

Preparation

  • In a food processor, blend the oats, flour, salt, and protein powder until combined (this takes less than a minute).
  • Add the Greek yogurt, vanilla or almond extract, unsweetened almond milk, and fresh strawberries to the food processor. Blend until fully combined (about a minute).
  • Pour in the melted coconut oil and blend just long enough to mix it in evenly.
  • Add the freeze-dried strawberries and pulse a few times. Be careful not to over-blend; you want some chunks of the dried strawberries in the mix.
  • Scoop out a spoonful of the batter and roll it into a ball. Continue this process until all the batter is used up (you should end up with about 20 bites).
  • Place the rolled bites in the refrigerator to chill before enjoying.

Notes

These bites can be enjoyed on their own or with a drizzle of honey or sprinkle of extra fresh strawberries. Store them in an airtight container in the refrigerator for a week. Optionally, substitute some coconut flour with almond flour for a nuttier flavor.
