  • 4 cups Fresh spinach Use baby spinach for a milder flavor.
  • 2 cups Sliced strawberries Fresh, ripe strawberries are best.
  • 1 cup Feta cheese, crumbled Can substitute with goat cheese if preferred.
  • 1/2 cup Walnuts or pecans, chopped Toast lightly for added crunch.

Balsamic Vinaigrette

  • 1/4 cup Balsamic vinegar Adjust for desired tanginess.
  • 1/2 cup Olive oil Extra virgin olive oil is preferred.
  • 1 tbsp Honey Adjust sweetness to taste.
  • 1/4 tsp Salt To enhance flavors.
  • 1/4 tsp Pepper Freshly ground for best flavor.

Method

Preparation

  • In a large bowl, combine fresh spinach, sliced strawberries, crumbled feta cheese, and chopped walnuts or pecans.
  • In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
