Ingredients

For the Taco Filling

  • 1 pound ground beef or turkey Choose lean ground meat for a healthier option.
  • 1 packet taco seasoning Follow packet instructions for water addition.
  • 1 cup black beans, drained and rinsed Canned beans can be used for convenience.
  • 1 cup corn, frozen or canned If using frozen corn, heat before serving.
  • 1 cup diced tomatoes Fresh or canned tomatoes can be used.

For the Toppings

  • 1 cup shredded lettuce Iceberg or romaine works best.
  • 1 cup shredded cheese (cheddar or Mexican blend) Choose your favorite cheese for topping.
  • 8 taco-sized tortillas Corn or flour tortillas can be used.
  • Optional toppings: salsa, sour cream, jalapeños, avocado Customize as per preference.

Method

Cooking the Filling

  • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the skillet with the meat. Follow the packet instructions for adding water, and simmer for about 5 minutes.

Preparing Toppings

  • In separate bowls, prepare your toppings: rinse the black beans, heat the corn if frozen, and chop the tomatoes and lettuce.

Assembling Tacos

  • Divide the meat mixture, black beans, corn, and diced tomatoes into meal prep containers.
  • When ready to eat, warm the tortillas, and layer the meat and toppings as desired.
  • Sprinkle cheese over the finished tacos and add any optional toppings you enjoy.
