Ingredients
Flatbread Base
- 1 cup cottage cheese Smooth texture is preferred.
- 2 pieces eggs
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian herb mix
Toppings
- 2/3 cup pizza sauce
- 3.5 ounces grated cheese (Gouda, Edam, or mozzarella) Choose your preferred cheese.
- 2 ounces pepperoni Feel free to swap for other toppings.
Method
Preparation
- Preheat your oven to 350°F (180°C).
- In a blender, combine cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix; blend until smooth.
- Line a baking sheet with parchment paper and pour the mixture onto it; spread into a thin circle.
Baking
- Bake for 30 minutes or until golden brown.
- Increase the oven temperature to 400°F (200°C).
- Spread pizza sauce over the baked flatbread, top with grated cheese and pepperoni.
- Bake for an additional 8-10 minutes until cheese is melted and bubbly.
Serving
- Slice the flatbread pizza into wedges and serve it hot right out of the oven.

Notes
