Ingredients

  • 1.25 cups Almond flour
  • 1 cup Unsweetened shredded coconut
  • 0.25 cups Honey (or maple syrup for a vegan version)
  • 2 tbsp Fresh lemon zest
  • 3 tbsp Fresh lemon juice
  • 1 tsp Vanilla extract
  • 0.125 tsp Turmeric (for natural yellow color)
  • 1 pinch Salt
  • Extra for rolling shredded coconut

Method

Preparation

  • Place the almond flour, shredded coconut, salt, turmeric, honey, lemon zest, lemon juice, and vanilla extract into a food processor.
  • Pulse the ingredients until a thick, sticky dough forms. Make sure the lemon zest is evenly mixed in.

Shaping

  • Scoop out about 1 tablespoon of dough at a time. Roll it between your palms to create smooth, round balls.
  • Put extra shredded coconut in a shallow bowl. Roll each ball in the coconut until it is fully coated.

Chilling

  • Place the bliss balls on a tray or in a container and refrigerate for at least 2 hours. This step helps them firm up.

Storage

  • Keep them in an airtight container in the refrigerator for up to 14 days.
